Vegan Summer Rainbow Salad

My go to for a quick easy lunch, delicious energising vegan goodness all in a bowl!! Raw veggies contain all the delicate vitamins, enzymes and macronutrients that cooking destroys so you feel energy not lethargy after eating!! What's not to love about that? 

2tbsp Olive Oil
1 tbsp Apple Vinegar
Pinch of Salt
1 tsp Sugar
1/2 tbsp Dijon Mustard
2 Tomatoes
1/3 Cucumber
Handful of Sprouts
Handful of Corn
Lots of Lettuce

Mix together the Olive Oil, Vinegar, Salt, Sugar and Mustard, Chop all the veggies place in a bowl and combine everything to serve!!
