Vegan Pulao

1 1/2 cups Long Grained Rice
1/2 cup Mushrooms
1/4 cup French Beans
1/4 cup Green Peas
2 Large Carrots
1 Large Onion
1 Medium Tomato
1/2 inch Ginger
3 Cloves of Garlic
1 Green Chilli
1 Lime
5 tbsp Fresh Cilantro
1/2 cup Cashew Nuts
3 cups Vegetable Stock
2 tbsp Olive Oil
1 tsp Cumin Seeds
1 Indian Bay Leaf
3 Cloves
3 Green Cardamoms
1 Black Cardamom
2 Strands Of Mace
1 Small Star Anise
1 Inch Cinnamon
Salt and Pepper

Rinse the rice till the water runs clear then soak for 30 minutes, heat the oil and spices in a pan over a medium heat till they become fragrant, then add the chopped onion, ginger, chilli and garlic. Add the tomato and sauté for 2 or 3 minutes over a low heat, then add the vegetables and continue cooking for another couple of minutes. Add the drained rice and stir for another couple of minutes, add the water and vegetable stock, squeeze the lime and add half of its juice, cover the pan and cook over a low heat until all the water has been absorbed and the rice is well cooked, check on this a couple of times and add a bit of water if necessary. Once cooked stir it through and leave for 5 minutes, then serve with a handful of cashew nuts and the fresh Cilantro.
