Vegan Kebabs

SERVES: 2

1 Ear of Corn
1 Red Onion
1 Yellow Pepper
1 Zucchini
8 Cherry Tomatoes
2 tbsp Olive Oil
4oz Rice
Salt and Pepper 

Chop corn into rounds 4cm thick, quarter the onion, thickly slice the pepper and the Zucchini, leave the cherry tomatoes whole. Place everything in a bowl add the oil and toss until everything is evenly covered, then skewer all ingredients through with a kebab stick. Place under the grill, or on a BBQ and serve with rice.
