Udon Yaki Stir Fry


Japanese Cuisine 

7oz Cooked Udon Noodles
2 Baby Bok Choy
1 cup Shiitake Mushrooms
1 Carrot
1 Red Onion
1 tbsp Sunflower Oil
2 tsp Mirin Sake
3 tsp Soy Sauce
1 tsp Dashi Stock
1 tbsp Sesame Seeds
Salt and Pepper

Put the precooked udon noodles in boiling water for 2 or 3 minutes, then drain. Slice the bok choy and mushrooms into bite size pieces, chop the onion and grate the carrot into long strands. Combine the mirin sake, soy sauce, dashi stock and some salt and pepper in a cup and set to one side. Heat a pan over a medium to high heat with the sunflower oil and fry onions for a minute or two before adding the rest of the vegetables turning often. Add the noodles when the vegetables are almost cooked and pour over the mirin sauce you made earlier, stir for another minute then remove from the heat sprinkle with the sesame seeds and serve.
