Red Dhal Soup

Ingredients
1 Red Onion
1/3 cup Red Lentils
15oz Canned Tomatoes
1/3 cup Chickpeas
2 Cloves of Garlic
3 cups Vegetable Broth
4 tbsp Fresh Cilantro
2 tsp Cumin Seed
1 Red Chili
2 tbsp Olive Oil
Salt and Pepper

Directions
Sauté the cumin seeds until the become fragrant add the olive oil, the chopped onion and garlic and over a low heat cook until they begin to soften, stir in the lentils, chickpeas, vegetable broth, chopped chilli and tomatoes and simmer for 15 minutes or until the lentils have become completely soft. Season with a bit of salt and pepper, and serve with some freshly chopped Cilantro.
