1 tbsp Olive Oil
1 Onion
2 Cloves of Garlic
1 Red Pepper
2oz Green Beans
2oz Black Olives
2 Tomatoes
1 tsp Paprika
Pinch of Saffron Threads
1 tbsp Vegetable Stock
6oz Rice
1 Lemon
1oz Cilantro
Salt and Pepper 

Heat the oil in a pan and add the chopped onion and chopped garlic, cook slowly until tender. Add the diced pepper and the chopped green beans, cover and continue cooking for a few more minutes. Add the chopped tomato, the paprika, the saffron, the stock and enough water to cook the rice (see the packet) and bring to a simmer. Add the rice and continue cooking for about 20 minutes testing the rice as you go. Once almost done season with salt and pepper. Once ready serve with a slice of lemon and some chopped Cilantro.
