Marinated Pumpkin, Walnut and Pomegranate Salad

COOL: Overnight

16oz Pumpkin
1/4 cup Water
1 tbsp Agave Syrup
2 tbsp Flax Seed Oil
1/4 cup Apple Cider Vinegar
2 tbsp Allspice
2 Bay Leaves
1 Cinnamon Stick
1 Red Chilli
1 tbsp Olive Oil
10 Cherry Tomatoes
12oz Lettuce
1 Pomegranate
1/4 cup Walnuts

Peel and slice the pumpkin into thin strips and put in a bowl, combine the water, agave, apple cider vinegar, allspice, bay leaves, cinnamon and chopped chilli in a bowl and put the sliced pumpkin in it, cover it and leave overnight. Combine the tomatoes, lettuce and the pomegranate seeds with the olive oil add some of the marinated pumpkin and a splash of the marinade to serve.
