Lentils, Peanut Butter and Spinach Curry

Ingredients 
1/4 cup Red Lentils
2/3 cup Rice
1 Red Onion
5oz Baby Spinach
2 tbsp Fresh Ginger
2 Cloves Of Garlic
2 tbsp Peanut Butter
1 tbsp Soy Sauce
2 tsp Lime Juice
Zest of 1 Lime
2 tbsp Fresh Cilantro
1 Red Chili
1/4 tsp Cayenne
1/2 tsp Sesame Oil
2 tbsp Peanuts
Salt and Pepper

Directions
Cook the rice and lentils according to the packets instructions, sauté the onion, ginger and garlic over a medium heat in the sesame oil, when the soften and begin to change colour add the washed spinach and cook until its wilted. Add the lentils, peanut butter, soy sauce, lime juice and zest, the chopped Cilantro, the chilli, cayenne and season with salt and pepper mixing it well together, serve on a bed of rice with a handful of peanuts on top.
