Grilled Eggplant With Pomegranate

Ingredients
1 Eggplant
1 Pomegranate
1oz Walnuts
1 tbsp Fresh Cilantro
2 tbsp Soy Yogurt
1 Clove of Garlic
1 tbsp Olive Oil
Salt and Pepper 

Directions
Preheat the grill, or use a griddle on the stove, slice the Eggplant into 1cm thick lengths, paint with the olive oil on both sides and put under the grill keeping a careful eye, they should take between 5 and 10 minutes turn when it is looking well cooked. Meanwhile finely chop the garlic and combine with the soy yogurt, roughly chop the walnuts and the Cilantro taking care to remove the stalks. Cut the pomegranate in half and scoop out the seeds, when the Eggplant is cooked remove from the heat and scatter the other ingredients on top, serve.
