Green Bean, Carrot and Mushroom Salad

4 as a side

10oz Green Beans
10oz Shiitake Mushrooms
10oz Carrots
1 Clove of Garlic
1 Lemon
1 tbsp Olive Oil
1 tbsp Sesame Oil
1 tsp Mustard
1/2 tsp Cumin Seeds
1 tsp Sesame Seeds
Salt and Pepper

Halve and sauté the mushrooms in the olive oil, top and tail the beans and boil till cooked, slice the carrots into 1cm thick pieces and boil those too. Add the chopped garlic to the pan with the mushrooms and put back on the heat, when the garlic is cooked through combine all cooked ingredients in the pan and stir to coat evenly. Make a dressing with the lemon juice, the sesame oil, mustard and salt and pepper, toast the cumin and sesame seeds in a dry frying pan and combine all ingredients together to serve.
