Yakisoba Noodles

Fried Noodles Japanese Yakisoba

Ingredients
1 cup Shiitake Mushrooms
1/2 cup Baby Corn
1 cup Green Cabbage
1 tbsp Ginger
1 Small Onion
1 Carrot
4oz Yakisoba Noodles, or Ramen Noodles
2 tbsp Vegan Worcestershire Sauce
3 tbsp Soy Sauce
3 tbsp Mirin
2 tbsp Peanut Oil

Directions
Cook noodles to the packets instructions and set to one side. Mix the Worcestershire sauce, soy sauce and mirin and also put to one side. Heat half the peanut oil in a frying pan and sauté the finely sliced ginger and chopped onion until they have softened and picked up a bit of colour. Add the sliced mushrooms, shredded cabbage, grated carrot and the baby corn and cook for another few minutes, set aside in a bowl. Sauté the noodles in the remaining peanut oil for 5 minutes or until they have a little bit of crispiness, combine everything together and mix well to serve.
