Dorayaki, Japanese Red Bean Pancakes

Ingredients
1/4 Cup All Purpose Flour
2 tbsp Millet Flour
2 tbsp Tapioca Starch
1/3 Cup Soy Milk
4 tbsp Coconut Sugar
2 tbsp Baking Powder
4 tbsp Maple Syrup
1/4 tsp Salt
1/4 tsp Xanthan Gum
Zest Of 1 Orange
1 cup Adzuki Beans
Juice Of 1 Orange
1/4 Cup Water
2 tbsp Kuzu Starch
2 tbsp Coconut Oil

Directions
Whisk together the flours, tapioca starch, half the coconut sugar, baking powder, salt, xanthan gum, and the orange zest, create a well in the middle and slowly add the soy milk and half the maple syrup until everything has combined and formed a batter. Let it sit for 10 minutes.

Combine the kuzu starch and water and put to one side. Put the adzuki beans, the remaining maple syrup, orange juice, the remaining coconut sugar into a food processor and pulse to make a paste. Heat a saucepan and put the bean paste in there, over a low to medium heat add the water and kuzu mixture and stir often until the mixture begins to thicken about 5 minutes. Heat a frying pan over a low to medium heat for about a minute add some coconut oil and fry the mixture in the sizes you want the pancakes to be for about 1 minute on each side. Put a spoon or two of bean paste inside and serve as sandwiches.
