1 Yellow Onion
1 Carrot
1 tbsp Olive Oil
1 Jalapeno peppers
3 Cloves of Garlic
2oz Bulgur Wheat
1 tbsp Chilli Flakes
1 tbsp Ground Cumin
2 Large Fresh Tomatoes
15oz Canned Tomatoes
4oz Canned Kidney Beans
4oz Canned Black Beans
1oz Fresh Cilantro
7oz Rice
Salt and Pepper

Heat a saucepan, add the oil, the onion, the finely chopped carrot and the jalapeno pepper, sauté for about 5 minutes then add the roughly chopped garlic and continue cooking for another minute or 2. Stir in the bulgur, the chilli, the fresh tomatoes, the canned tomatoes and both beans and bring to a low gentle simmer and keep there for about an hour till everything is soft. While that is going on boil the rice. Finally season the chilli with salt and pepper and throw on some roughly chopped fresh Cilantro to serve.
