Black Beans and Rice with Cilantro

Ingredients
1 1/2 cups White Rice
15oz Canned Tomatoes
2 tbsp Olive Oil
4 Cloves of Garlic
1 Fresh Jalapeño
8oz Black Beans
2 tsp Ground Cumin
1 tsp Chilli Powder
1/4 cup Fresh Oregano
1/4 cup Fresh Cilantro
Salt and Pepper

Directions
Cook the rice according to the packets instructions, heat a saucepan and over a medium heat cook the chopped garlic and jalapeño in the olive oil, when they begin to change colour add the beans, salt, cumin and chilli powder, cook for a couple of minutes stirring occasionally, add in the canned tomatoes and bring to a simmer for 5 – 10 minutes or until everything is tender, add in the chopped Cilantro, oregano and the cooked rice, stir well and serve.
