Black Bean and Quinoa Burritos

4 Tortilla Wraps
4oz Black Beans
4oz Quinoa
4oz Sweet Corn
1 Green Pepper
1 Large Tomato
1 Medium Onion
4 Cloves of Garlic
1 Red Chilli
1oz Fresh Cilantro
1 tbsp Olive Oil
1 tsp Ground Cumin
Salt and Pepper

Precook the Quinoa. Heat the oil in a saucepan and add the chopped onion, fry on a medium heat for 3 or 4 minutes then add the garlic and continue frying for another 2 or 3 minutes turning often. Add the green pepper and the tomato and continue frying for another couple of minutes. Next add the black beans, the cooked quinoa, the sweet corn, the chilli, the chopped Cilantro stalks (keep the leaves separate) the cumin, and the salt and pepper, cover and simmer with just enough liquid for ~10 minutes. Place an equal amount of the mixture into the middle of each tortilla wrap, fold it over and serve.
